In the morning at 7 o’clock after arriving from the Cairo airport to Alexandria, I was so tired that of course my first serious thought was, What I am going to eat? Along the way I had only local biscuit with fresh cold water but now it really wants some Food!
Yet very early in the morning and the whole city still sleeping. What now? What can I do? How long do I have to wait till restaurant open? In my black thoughts and on the verge of my hunger, my husband showed me how Egypt is strong and amazing as a country and can solve every situation.
He led me to a street shop where they sell Falafel sandwiches. As one of the little shops it opens early in the morning, the food is fresh and there are no queues. ,, How many sandwiches do you want,,? was the first question of my husband towards me. Of course, as a educated European I said just ONE because I imagined one sandwich can cost 30 LE. My husband was terrified of my decision so he took me a two sandwiches at the end.
When I bite into the sandwich it was the best one in the world which I have ever to ate in my life. Fresh Arabic bread, Falafel, fresh vegetables and homemade sauce. Well just -delicious! It woke me up on all the day long and brought me the feeling Egypt is the best and more delicious country in the world. and by time I understood that One sandwich costs only 2 LE. {LOL} so since that I always take more than one.
And thanks to this my beautiful memory and experience which stayed in my heart forever – I will reveal to you the secret of original Egyptian Falafel recipe. Then you can also achieve a perfect taste of Falafel, like you are a true Egyptian.
Falafel Recipe
What Ingredients do you need?
2 medium sized onions
1 celery
300 g of yellow beans
2 bunches of parsley
1 bundle of dill
10 spring onions
1 garlic
How to cook perfect Falafel?
*Put the beans in the water and let them rest for 24 hours.
*After that we drain the beans.
*Cut the other ingredients into cubes and put them in a blender with the beans. Mix with occasional mixing until smooth green dough.
*Add the spices to the dough, mix well.
*Form the dough to medium-sized balls with your hands then squeeze them little bit to be bigger
*Sprinkle with sesame seeds and fry Falafel to gold colour on both sides.
We can serve. The best Falafel is freshly fried with vegetables and Arabic bread.
Tip: If you don’t use all the dough, you can keep it in the fridge or freezer.
